Summer is just around the corner and there is nothing better on a warm sunny day than the juicy goodness of plump ripe tomatoes, infused with the tangy zing of fresh limes and the fiery kick of jalapeños in a Spicy Fresh Salsa.
Over the past couple months I’ve lost close to 10lbs and I owe it mostly to fuelling my body with REAL FOOD. As easy as it is to grab something quick on the run (which usually means eating something from a box. Dunked in Fat + Infused with Crap) I’ve made a conscious decision to limit processed foods and artificial sugar from my diet.
I’ve also started portion controlling my meals so that I’m not over-eating. A big no-no for those of you who are trying to get your beach body ready for the summer.
Getting plenty of beauty sleep so my liver has a chance to detox and taking a vitamin supplement twice daily has also kept me craving more of the good and none of the bad.
But ultimately…eating clean and fresh has made the world of a difference in my energy level. And it’s been Ah-MAY-Zing not getting that icky, bloated, lethargic, I-just-want-to-go-to-sleep feeling after a meal.
So here is an easy and uber tasty salsa recipe that will have you so addicted to the beautiful harmony of fresh flavours you will never ever EVER want to buy the pre-made stuff in a jar ever again.
- Toss the diced red onion, cilantro, jalapeño and seeded tomatoes into a bowl until well combined.
- Grate the garlic into the bowl and mix well.
- Squeeze the juice of 1 lime into the bowl.
- Add salt and pepper to taste.
- Put in the fridge to chill for at least 30min so the flavours can mingle.
