‘Tis the season for holiday get togethers and potlucks! While I love hanging out with good company and sharing delicious food, often times the special feasts we share have menus with high-fat, high-carb and high-sugar foods which not only pack on the pounds, but makes you feel sluggish, bloated, icky and lie-on-the-couch-don’t-want-to-do-anything-GROSS! I know you know that feeling!!
Sometimes it’s pure over-indulgence, but often times it’s because the dishes our lovely friends and family make are a bit short on the good stuff.
Here’s a tasty and smart way to sneak in fresh veggies at your next potluck to keep your energy level up, so you can party all night long.
These Proscuitto Spring Mix Rollups are super quick to make and a huuuge hit every time I make them.
Because it’s decadently wrapped in a perfectly marbled, buttery smooth piece of melt-in-your-mouth proscuitto, even the most manly-man of the bunch will throw back a couple without any complaints.
Proscuitto Spring Mix Rollup
Ingredients:
Spring Mix
Proscuitto
Balsamic Dressing (1 tbsp Balsamic Vinegar, 1/2 tsp Honey, 1/2 tsp Dijon Mustard)
Directions:
Mix the dressing with the spring mix.
Place a healthy handful of greens on top of a slice of proscuitto and wrap.
And if you are feeling a bit creative. Julienne a rainbow mix of veggies and wrap that in proscuitto instead. The vibrate colours are a treat to the eye, and the crunch mixed with the delicate smoothness of good aged meat is to die for! The image below is taken from my IG feed.
