Mango Coconut Chia Seed Pudding

Ch-ch-ch-chia! Remember those crazy looking things with the somewhat annoying commercial that used to get stuck in your head?

YUP! They are one and the same with the trendy Chia Seeds that are adorning every health food aisle and splattered across display windows at whole food stores.

Believe it or not, this very nutritious ancient seed dates way back to the Aztecs and the Mayans, and is considered a superfood exploding with goodness.

Health Benefits of Chia Seeds

Chia seeds don’t have much flavour on their own, so they can be easily added to any recipe without taking away from delicate flavors.  When eaten dry, chia seeds are small and crunchy…kinda like poppy seeds.  But when they are soaked in liquid, they become plump and soft, almost like tapioca.

Chia seeds absorb 9-12 times its weight in water and because of this it makes a great tapioca-like pudding.

Combine this with some coconut, mangos and homemade almond milk (it’s actually not hard to make) and you’ll have THE MOST ADDICTIVE SUMMER DESSERT RECIPE ever! Oh, did I mention it’s gluten-free AND raw!!!

Mango Coconut Chia Seed Pudding Recipe Ingredients

Chia Seed Pudding steps

Only 4 steps….and no cooking or baking required!

  1. Mix the dry ingredients
  2. Mix the wet ingredients
  3. Add diced mangos (if you are feeling adventurous, puree the mango before mixing for a super smooth + creamy melt in your mouth pudding! See picture on the bottom right of the collage below.)
  4. Stir together and refrigerate for 5-6 hours

*Tip: Mangos add a natural sweetness so you may not even need to add honey.
